Gingerbread Men

By J Gardener
Quick-picture the last gingerbread house you saw, in your mind. Now, without thinking about it, what was the season when you saw it? Chances are, it was Christmas-time. Few treats are as closely associated with Christmas as gingerbread, and rarely do we see it, any other time of the year-which is amazing, since your kids can’t seem to get enough of it, when it’s offered.

As well, we seem to have it embedded in our cultural consciousness that gingerbread is somehow inherently English and Victorian. But the history of gingerbread goes back much further than nineteenth century Europe. Continue reading

Ginger – The Natural Anti-Inflammatory Without the Side Effects

The healing powers of ginger have been well documented for hundreds of years in eastern Ayurvedic medicine, ancient Chinese medicine and western folklore. Traditional medicine has investigated the potential healing qualities of ginger through scientific methods and found it contains zingibain, a special proteolytic* enzyme. Research shows that proteolytic enzymes have anti-inflammatory properties. These enzymes work by inhibiting the production of prostaglandins and leukotrienes which are involved in the pain and inflammation process. For arthritis sufferers this is very important. Ginger will help reduce the inflammation and so reduce the pain that occurs as a direct result of the inflammation. With lesser pain and inflammation arthritis sufferers can enjoy better mobility, but more importantly a better quality of life. Continue reading

Ginger – Anti-Inflammatory Properties Ease Arthritis

Fresh ginger is easy to find in the markets and is definitely one of my favourite spices especially fresh. It is thought to have originated in China spreading to India, Southeast Asia, West Africa, and the Caribbean and so on. The part of the plant used is the swollen roots or to be precise the rhizomes, which are swollen underground stems. The plant has pointed leaves and produces yellow-green flowers with a deep-purple lip. The rhizomes are used either fresh or dried and used in the form of a powder. Continue reading

Lebkuchenhertz, or The German Gingerbread

By Rebecca Cros
We’re going to do a quick food association here. Get ready…

GERMANY!

Among the things that probably popped into your head were Beer, Bratwurst, Sauerkraut. I won’t say that the stereotyping is wrong here. Germans love their beer, bratwurst (actually all different kinds of delicious wursts) and sauerkraut, but there is just SO MUCH MORE to German food than this trinity of deliciousness.
There’s also dessert. Continue reading

Lebkuchen. German Christmas gingerbread.

Lebkuchen (or Pfefferkuchen) is a traditional German baked Christmas treat, somewhat resembling gingerbread.

Lebkuchen were invented by Medieval monks in Franconia, Germany in the 13th century. Lebkuchen bakers were recorded as early as 1296 in Ulm, and 1395 in Nürnberg (Nuremberg). The latter being the most famous exporter today, of the product that is known as Nürnberger Lebkuchen (Nürnberg Lebkuchen).

Local history in Nuremberg relates that emperor Friedrich III held a Reichstag there in 1487 and he invited the children of the city to a special event where he presented Lebkuchen bearing his printed portrait to almost four thousand children. Continue reading

Christmas Baking Is A Time For Favorite Recipes And Family Togetherness

By Kaye Dennan
One of my fondest Christmas memories is decorating Santa and Christmas tree-shaped sugar cookies with my mom when I was ten years old. They were supposed to be for a holiday bake sale, but they were so delicious that we ended up eating half of them before we were even finished frosting them. Consuming that much sugar in one sitting was amazing, of course, but it is the fun I had just spending time with my mom that really made that day so much fun. Christmas baking with your children is a great way to bond with them during the holiday season, and make memories that both of you will treasure for a long time. Continue reading
